Anti pasti

  1. Remove burrata from the fridge one hour prior to eating.

  2. Pre-heat oven to 180 for 10 mins, then add the wedge of focaccia for 5 mins.

  3. Slice the focaccia into generous slices.

  4. Serve with the burrata, and drizzle generously with truffle honey.

Rigatoni alla Amatricana

  1. Bring a pot of lightly salted water to a rolling boil.

  2. Empty the jar of Coppi Sugo ‘Nduja or Sugo Pomodoro into a separate pot and gently simmer.

  3. Add the Guanciale mix.

  4. Allow to gently simmer while stirring.

  5. Place pasta in the boiling water and cook for 3 mins.

  6. Drain, and toss the pasta in your sauce.

  7. Finish by sprinkling with Parmesan.

RIGATONI ALLA SICILIANA

  1. Bring a pot of lightly salted water to a rolling boil.

  2. Empty the jar of Coppi Sugo Pomodoro into a separate pot and gently simmer.

  3. Add the aubergine relish.

  4. Allow to gently simmer while stirring.

  5. Place pasta in the boiling water and cook for 3 mins.

  6. Drain, and toss the pasta in your sauce.

  7. Finish by sprinkling with herb pangrattato.
